Mascarpone Swirled Brownies

Mostly, it's too hot for the oven to be on. Mostly, I want to sit on the patio with a cool breeze and an even cooler cocktail. These brownies, which have a moist texture to them because of the mascarpone cheese, are good with a chilled white wine.

I modified the recipe only slightly from the original from Food and Wine, adding some white chocolate chunks in place of some of the semi-sweet chunks. At Chez Sweetcakes, it's hard to find a recipe that the whole family likes. This is one of them. That's no minor miracle, my friends.

One of my favorite things about summer in Salt Lake City is the Red Butte Concert Series. Jimmy Cliff put on a wonderful show a few nights ago. The weather was amazing, and so was the view of the mountains; the crowd was lively; and Mr. Sweetcakes and I brought some wine and dinner to enjoy during the show. Mostly I danced, because, truly, isn't reggae and ska the best music to dance to?
